DRESS
Pale and shiny, with pearly reflections
NOSE
With great finesse, the fruity aromas of wild strawberries are balanced with the vegetal aniseed notes of fresh herbs, such as Thai basil and fennel.
PALATE
Beautiful volume on the palate with a structured and complex wine that reveals a real persistence of menthol notes at the end of the mouth

Cultivated area : 2.5 ha. Organic farming. Limited production
VINIFICATION
Vinification : Free run juice and direct press with a light maceration.
Slow fermentation at low temperature in stainless steel tanks.
Ageing : Partially fermented in barrel. Partial aging in barrels
followed by a short aging on lees, the remainder in stainless steel tank.
