Type of soil : Clay and limestone. Stony
Exposure : Hillside terraces facing South East
Cultivated area : 2.5 ha. Organic farming. Limited production
VINIFICATION
Vinification : Free run juice and direct press with a light maceration.
Slow fermentation at low temperature in stainless steel tanks.
Ageing : Partially fermented in barrel. Partial aging in barrels
followed by a short aging on lees, the remainder in stainless steel tank.
