DEGUSTATION
DRESS
Pale and brilliant yellow, with gold reflections.
NOSE
Blend of delicate aromas from citrus such as pomelo, with gourmet notes of pear.
PALATE
Nice tension on the attack. It is round and persistent in the mouth with a finish on acidity reminiscent of rhubarb notes. A complex and balanced wine.

FOOD PAIRING
Seafood platter. Scallops carpaccio with pomegranate and coriander. Sea bream with fennel. Goat cheese and rhubarb chutney.

TERROIR

Type of soil : Clay and limestone. Very stony.
Exposure : Hillside terraces facing South East.
Cultivated area : 1.5 ha. Organic farming. Limited production.

VINIFICATION

Vinification : Free run juice and direct press. Slow fermentation at low temperature in stainless steel tanks.
Ageing : Aging on lees in stainless steel tanks.
