PRODUCTION
Harvest : Harvesting of ripe olives, semi-manual.
Presse : Mechanical process only with traditional method. Olives stubbled at 37°C with natural fermentation, then crushing, grinding and cold press. Decantation
in vats naturally, without filtration.
