DRESS
Bright and clear oil, with light golden reflections.
NOSE
PALATE
Aromas of bitter almond and mushroom, with light cocoa notes on the finish. Mouth covering with a balanced creaminess, ending with a nice and fiery finish.

Exposure : Hillside terraces, facing South-East.
Cultivated area : 15 ha. Organic Agriculture. Limited crop
PRODUCTION
Harvest : Harvesting of ripe olives, semi-manual.
Presse : Mechanical process only with traditional method. Olives stubbled at 37°C with natural fermentation, then crushing, grinding and cold press. Decantation
in vats naturally, without filtration.
