Soil type : Clay and limestone. Stony.
Exposure : Hillside terraces facing South East.
Cultivated area : 2 ha. Organic farming.
VINIFICATION
Vinification : Direct pressing with a light maceration, then long cold
stalling in stainless steel tanks to release the pleasant
aromas of the fruit. Slow fermentation at low
temperature in stainless steel tanks.
Ageing : 6 months in stainless steel tank.
