DRESS
Pale yellow.
NOSE
Fresh and expressive, marked by aromas of fruits like yellow melon and lime, followed by light floral notes.
PALATE
Soft attack with roundness. A fresh and lively wine that offers a well-balanced tasting from its minerality to the citrus notes on the finish.
SERVICE TEMPERATURE

FOOD PAIRING
Sea bream ceviche, lime zest and mango vinaigrette. Roasted mediterranean vegetables with thyme.

TERROIR

Soil type : Clay and limestone. Stony.
Exposure : Hillside terraces facing South East.
Cultivated area : 2 ha. Organic farming.

VINIFICATION

Vinification : Direct pressing with a light maceration, then long cold
stalling in stainless steel tanks to release the pleasant
aromas of the fruit. Slow fermentation at low
temperature in stainless steel tanks.

Ageing : 6 months in stainless steel tank.

    DEGUSTATION
    DRESS
    Pale and brilliant yellow, with gold reflections.
    NOSE
    Blend of delicate aromas from citrus such as pomelo, with gourmet notes of pear.
    PALATE
    Nice tension on the attack. It is round and persistent in the mouth with a finish on acidity reminiscent of rhubarb notes. A complex and balanced wine.
    SERVICE TEMPERATURE

    FOOD PAIRING
    Seafood platter. Scallops carpaccio with pomegranate and coriander. Sea bream with fennel. Goat cheese and rhubarb chutney.

    Cultivated area : 1.5 ha. Organic farming. Limited production.

    Vinification : Free run juice and direct press. Slow fermentation at low temperature in stainless steel tanks.
    Ageing : Aging on lees in stainless steel tanks.
