TERROIR
Soil type : Clay and limestone. Very stony
Exposure : Hillside terraces facing South East.
Cultivated area : 1.5 ha. Organic farming. Limited production
VINIFICATION
Vinification : Harvested at night to limit color development.
Direct pressing, isolating the first drops of juice in a small volume.
Stabulation on lees for 10 days (+/- 3°) to develop
aromatic extraction, followed by AF at base
temperature +/-14° in stainless steel tanks.
Ageing : Aged on lees for several weeks
