Soil Type : Clay and limestone. Stony.
Exposure : Hillside terraces facing South East.
Cultivated area : 10 ha. Organic farming.
VINIFICATION
Vinification :Direct pressing with a light maceration, then long cold stalling in stainless steel tanks to release the pleasant aromas of the fruit and the light colour the juices. Slow fermentation at low temperature in stainless steel tanks.
Ageing : 6 months in stainless steel tank
