Blend : 50% Grenache, 35% Syrah, 15% Cinsault
DEGUSTATION
DRESS
Pale Pink
NOSE
Fresh and expressive, marked by aromas of citrus fruit such as grapefruit, white fruit as well as typical red fruit notes.
PALATE
A rounded attack is balanced by a seam of acidity. Fresh red fruit notes combine with a citrus freshness for a moreish finish.
SERVICE TEMPERATURE

FOOD PAIRING
Grilled chicken and ratatouille, stuffed tomatoes, tomato and ricotta salad, baked sea bream with herbs

TERROIR

Soil Type : Clay and limestone. Stony.
Exposure : Hillside terraces facing South East.
Cultivated area : 10 ha. Organic farming.

VINIFICATION

Vinification :Direct pressing with a light maceration, then long cold stalling in stainless steel tanks to release the pleasant aromas of the fruit and the light colour the juices. Slow fermentation at low temperature in stainless steel tanks.
Ageing : 6 months in stainless steel tank

    Blend : Grenache noir 45% - Syrah 30% - Rolle 15% - Caladoc 10%
    DEGUSTATION
    DRESS
    Pale and bright with hints of peach.
    NOSE
    Summer fruit aromas with raspberry, and slight spices.
    PALATE
    Very well balanced, with a pleasant roundness, supported by vivacious and persistent fruit aromas. Grenaches give finesse and elegance.
    SERVICE TEMPERATURE
    11°C
    FOOD PAIRING
    Grilled red mullet and garlic cream, bouillabaisse, lamb tagine with candied lemon, or cod fritters with sweet and sour sauce.

    Type of soil : Clay and limestone. Stony
    Exposure : Hillside terraces facing South East
    Cultivated area : 10 ha. Organic farming.

    VINIFICATION

    Vinification : Free run juice, and press. Small yields around 30hl/ha, slow fermention at low temperature.
    Ageing : 10 months in stainless steel tank. Partially aged in wood barrels
